Rum BBQ Chicken Thighs



It's grilling season, and these Rum BBQ Chicken Thighs are juicy and tasty. The rum and BBQ sauce add sweetness to the chicken while the marinade gives it a rich, smoky flavor. This dish is simple but looks great, and it will make any barbecue or weeknight dinner better.

Ingredients:

  • 6 chicken thighs, bone-in, skin-on
  • 1 cup rum
  • 1 cup BBQ sauce
  • 2 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

In a bowl, mix rum, BBQ sauce, minced garlic, brown sugar, Worcestershire sauce, smoked paprika, salt, and black pepper

Add chicken thighs to a large resealable plastic bag and pour the marinade over them

Seal the bag and massage to coat the chicken evenly

Marinate in the refrigerator for at least 1 hour, preferably overnight

Preheat grill to medium-high heat

Remove chicken from marinade and discard excess marinade

Place chicken thighs on the grill and cook for 6-8 minutes per side, or until fully cooked through and charred on the edges

Remove from grill and let rest for a few minutes

Garnish with chopped parsley before serving
