A classic baked potato recipe with a cheesy twist, inspired by Martha Stewart's kitchen.
Ingredients:
- 4 large russet potatoes
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 1/2 cup grated cheddar cheese
- 2 tablespoons chopped fresh chives
Instructions:
Preheat the oven to 400F 200C
Scrub the potatoes clean and dry them thoroughly
Poke each potato several times with a fork
Rub olive oil over each potato and season with salt and pepper
Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender
Remove from the oven and let cool slightly
Slice each potato in half lengthwise and fluff the insides with a fork
Sprinkle each potato with grated cheddar cheese and chopped chives
Return the potatoes to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly
Serve hot and enjoy!
