Pumpkin Rice Noodles Stir Fry



This Pumpkin Rice Noodles Stir Fry is a flavorful and satisfying dish that combines the sweetness of pumpkin with the savory goodness of soy sauce and aromatic spices. It's quick and easy to prepare, making it a perfect weeknight dinner option.

Ingredients:

  • 200g rice noodles
  • 2 cups diced pumpkin
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp vegetable oil
  • 2 tsp sesame oil
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions:

Cook rice noodles according to package instructions

Drain and set aside

Heat vegetable oil in a large pan or wok over medium-high heat

Add diced pumpkin and stir fry for 5-7 minutes until it starts to soften

Add sliced onion, red bell pepper, minced garlic, and grated ginger

Continue to stir fry for another 3-4 minutes until the vegetables are tender

Stir in the cooked rice noodles and soy sauce

Toss everything together and cook for an additional 2-3 minutes

Drizzle with sesame oil, sprinkle with red pepper flakes, and season with salt and pepper to taste

Stir well to combine

Remove from heat and garnish with fresh cilantro leaves
