Paleo Sweet Potato Fritters



These tasty and nourishing Paleo sweet potato fritters are a great choice for breakfast or brunch. Sweet potatoes are grated and seasoned with paprika and garlic powder to create crispy exteriors and tender interiors. They'll fill you up and give you energy for the day because they're topped with a perfectly fried egg and creamy mashed avocado!

Ingredients:

  • 2 medium sweet potatoes, grated
  • 2 eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons coconut oil
  • 2 ripe avocados
  • 4 eggs
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions:

In a large bowl, mix together grated sweet potatoes, eggs, almond flour, garlic powder, paprika, salt, and pepper

Heat coconut oil in a skillet over medium heat

Form sweet potato mixture into small patties and place them in the skillet

Cook for 3-4 minutes on each side, until golden brown and crispy

While the fritters are cooking, mash the ripe avocados in a bowl and season with salt and pepper

In another skillet, fry the eggs to your desired doneness

Serve the sweet potato fritters topped with mashed avocado and a fried egg

Garnish with fresh cilantro if desired
