Moroccan Lentil Stew



A tasty and healthy Moroccan-style lentil stew made with fragrant herbs and vegetables that is great for a meal.

Ingredients:

  • 1 cup dried red lentils
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, for garnish

Instructions:

Put the red lentils aside after running them under cold water

Put olive oil in a big pot and heat it over medium-low heat

Put in the minced garlic and chopped onions

Saut until the onions get soft

Dice the tomatoes and put them in the pot with the vegetable broth, carrots, and red lentils

Add the cayenne pepper, salt, pepper, turmeric, cumin, and coriander

Mix them in

Once the mixture starts to boil, turn down the heat

Keep the lid on and cook for 25 to 30 minutes, or until the lentils are soft

If you need to, adjust the seasonings

Serve hot with fresh cilantro on top
